Cucumber Melon Salad

I love fresh salads in the summer. I wanted to create a salad featuring all the fresh fruits from my  Talley Fresh Harvest produce box. Melon, cucumber, nectarines, and feta come together in this Cucumber Melon Salad; it’s the perfect addition to your summer barbecue or Sunday brunch.

Cucumber Melon Salad

2 Nectarines, chopped

1 Melon, chopped

3 Persian cucumbers, sliced

1/4 cup Feta

1/2 Tablespoon Fresh Mint, minced

Lime and Honey Vinaigrette

2 Tbsp Lime Juice

½ Tablespoon Honey

Combine fruits, cheese, and mint in a large bowl. In a mason jar, shake vigorously until combined with the line juice and honey. Pour over salad and mix well. Serve immediately.
