Strawberry Balsamic Vinegar
This is an easy way to use up extra fruit and create a flavorful fruit-infused vinegar. You can substitute almost any fruit for the strawberries. I especially love using blueberries along with basil to make a blueberry basil vinegar.
Here, I take a cup of chopped strawberries, two strips of lemon peel with the pith removed, and a whole bottle of white balsamic vinegar. After combining everything in a large glass jar, I let the mixture sit in the fridge for two weeks. Then strain it, and you’ll have a strawberry vinegar ready for vinaigrettes and salads like this Berry Burrata Salad.
