Berry Burrata Salad with Strawberry Balsamic Vinaigrette
Spring is here in all her goodness, bringing California berries into season! This salad takes blackberries and sweet strawberries, and combines them with the creamy flavor of fresh burrata, toasted walnuts, and that spicy kick from arugula to create the perfect bite. I created a vinaigrette out of some strawberry balsamic I made (recipe is also included), but you can also mash up fresh strawberries with white balsamic or champagne vinegar to create a quick berry vinegar replacement.
Strawberry Balsamic Vinaigrette
Ingredients
1 tablespoon strawberry balsamic vinegar (recipe here)
2 tablespoons olive oil
Salt and pepper, to taste
In a small bowl or jar, whisk together the strawberry balsamic vinegar and olive oil until smooth and emulsified. Season with salt and pepper to taste. Set aside.
Burrata Salad
Ingredients
2-3 cups arugula
1 cup sliced strawberries
1 pint blackberries
1-2 balls burrata
Toasted pecans or walnuts
Instructions
Arrange the arugula on a serving platter or in a large bowl. Scatter the sliced strawberries and blackberries evenly over the top.
Gently tear or place the burrata over the salad, allowing it to sit naturally among the fruit and greens.
Sprinkle with toasted pecans or walnuts for added texture and flavor.
Drizzle the strawberry balsamic vinaigrette over the salad just before serving.
Lightly toss and serve.
