Blueberry Ginger Orange Shrub
Shrubs are a mixture of fruit, vinegar, and sugar. You can add them to cocktails or mix them with sparkling water to make a delicious mock-tail. When I’m cutting out alcohol I’ll make a batch of shrubs so I can still have something refreshing to sip. Shrubs are also a great way to use an abundance of fruit, especially in the summer and spring. You can be creative and use any variety of fruits like plums, peaches, berries, and even citrus. My favorite is to mix fruits with herbs or add ginger for a kick. Enjoy!
Blueberry Ginger Orange Shurb
2 cups blueberries, smashed to release juice
1 Tblsp grated fresh ginger
Zest from one large orange
2 cups apple cider vinegar
1 1/2 cups sugar
To make: In a large heavy bottom stainless pan add blueberries, ginger, orange peel, vinegar and sugar. Bring to boil and stir to dissolve sugar. Turn off heat and allow to sit for at least 30 mins to an hour. Strain through a fine-mesh sieve into a glass jar screw on lid and chill.
To serve: Fill a glass with ice; add 2 tablespoons shrub. Top with 1/3 cup club soda. Gently stir to blend.

Note: It can be stored in a tightly sealed jar in the fridge for up to 6 months. Discard immediately if it has mold or any signs of fermentation, such as bubbling, cloudiness, or sliminess.
