Traeger Apple Butter Ribs
2 Racks St. Louis-style ribs
Favorite Rub **I use Traeger Pork & Poultry
1/8 Cup brown sugar
4 Tablespoon agave
1 bottle of your favorite bbq sauce **I love Sweet Baby Rays)
1 jar Christiana’s Preserves Apple Butter
When ready to cook, set Traeger temperature to 225℉ and preheat, lid closed for 15 minutes.
Remove membrane from back of ribs. Season with rub on all sides. Let ribs rest for 15 to 20 minutes.
Place ribs on the grill, bone-side down and cook for 3 hours. While ribs are cooking, prepare the brown sugar wrap. Spread (approximately the same size as the rack of ribs) half the brown sugar, and half the agave on top of a double layer of aluminum foil. Repeat for second rack.
After 3 hours, place one rack of ribs meat side down in the brown sugar & butter and wrap. Repeat with second rack. Turn grill up to 250℉ and place wrapped ribs, meat side down in grill.
While Ribs cook prepare Apple Butter BBQ sauce. Mix together 1 cup bbq sauce and 1 cup apple butter. Set aside until ready to use.
Remove ribs from the grill and foil packet. Place unwrapped ribs back on the grill and brush each rack on both sides with a liberal amount of Apple Butter BBQ Sauce. Cook for an additional 10 minutes. Remove from grill. Slice rib and serve. **I like to heat my remaining sauce and serve on the side
