Smoked Mushrooms with White Wine & Garlic
Mushrooms have become my newest obsession! And smoking mushrooms bring the flavors to another level. This is a simple recipe with just a few ingredients. It delicious as a side to barbecued chicken thighs, roasted cauliflower, and simple kale salad.
Smoked Mushrooms with White Wine & Garlic
1 lb mushrooms, mixed variety ( I prefer to use a mix of oyster, Maitake, Beech, and cremini)
olive oil
sea salt
1/4 cup dry white wine
3 sprigs fresh thyme
3 garlic cloves, minced
Parmesan Cheese
Heat Traeger to 275 using Alder Pellets.
Place mushrooms in a cast iron pan and drizzle with olive oil, season with salt and pepper. Cook for 30 mins.
Increase heat to high setting.
Combine wine and garlic and pour over mushrooms along with thyme sprigs. Cook for 15 more minuets until tender.
Grate fresh parmesan cheese over mushrooms and enjoy!
