Olive Oil Cake

Extra Virgin Olive Oil Cake Recipe

Ingredients

  • 2 eggs

  • 1/2 cup sugar

  • Zest from 1 lemon

  • 1/3 cup sweet Marsala wine

  • 1/3 cup milk

  • 3/4 cup extra virgin olive oil

  • 1 tablespoon baking powder

  • 1 1/2 cups all-purpose flour

Instructions

Step 1: Prepare the Pan and Oven

Preheat the oven to 400°F.

Grease a 9-inch round pan with olive oil to prevent sticking.

Step 2: Mix the Batter

In a mixing bowl, combine the eggs and sugar and whisk until smooth.

Add the lemon zest, sweet Marsala wine, milk, and extra virgin olive oil. Mix until fully combined.

Add the baking powder and flour, and stir until a smooth batter forms. Be careful not to overmix.

Step 3: Bake the Cake

Pour the batter into the prepared pan and smooth the top.

Bake for about 30 minutes, or until the cake is lightly golden and a toothpick inserted into the center comes out clean.

Step 4: Cool and Serve

Allow the cake to cool before slicing.

Serve as is, or dust lightly with powdered sugar if desired.
