Flank Steak with Chimmichuri & Traeger Roasted Potatoes

We have a few favorite dinners in our home: An Israeli feast I make regularly and Flank Steak with Chimmichuri & Traeger Roasted Potatoes. And depending on the time of year I’ll add a veggie to round out the meal.

Flank Steak

1 (2.5 lb) Flank Steak

Favorite Rub ( I love the Traeger Rub)

Coat your steak generously with rub and gently pat into meat. Place on a sheet pan, cover with plastic wrap and let sit in fridge for 5 + hours.

Remove meat 30 mins before grilling and let come to room temperature.

Prepare your grill for direct cooking over medium-high heat (400° to 450°F).

Grill your steak over direct medium-high heat, with the lid closed, 6 to 8 minutes for medium rare (or your preferred doneness), turning once. Grill until an instant-read thermometer inserted into the center of the steak registers 125°F.

Remove from the grill, cover with foil, and rest at room temperature, indoors, for 10 minutes.


Chimichurri

1 shallot, shopped in quarters

4 cloves of garlic

1/2 cup red wine vinegar

1 tsp kosher salt

1/2 teaspoon red pepper flakes

1/2 cup cilantro

1/4 cup Italian flat leaf parsley

2 Tablespoons Fresh Oregano

3/4 cup olive oil

In the bowl of a food processor add shallot and garlic, process until finely chopped (about. 10 seconds).

Add cilantro, parsley, and oregano. Process in processor for 10 seconds.

Add red wine vinegar, salt, and red pepper flakes. Process for another 10 seconds.

Turn on processor and while running carefully add olive oil in a constant stream until combined.

Enjoy with your favorite meat, veggies, and eggs.


Traeger Roasted Potatoes

1.5 lbs dutch baby potatoes, washed

Salt

Olive oil

Salt and pepper

Add potatoes to a heavy bottom pan, cover with water, and add a generous amount of salt. Boil for 6-8 mins until partially done. When you insert a knife you should have a little push back. Drain potatoes. Spread on a foil lined sheet pan, drizzle with olive oil, season with salt and pepper.

Heat your Traeger to 375 using Alder Pellets.

Place sheet pan on grill and cook for 15 to 20 minutes, turn half way through, and cook until browned and cooked through.
